This dish is a favourite in our home, not only because it’s packed with protein, good carbs, minerals, vitamins and lots of delicious flavours, it is easy and simple to make.
If you don’t have an electric crock-pot (slow cooker), we really recommend you buy one. This simple and inexpensive pot is without a doubt a super tool when it comes to cooking legumes, whether beans or chickpeas, they come out so delightfully tender plus it needs no oil for cooking. For this recipe just chop the veggies and throw with the rest of the ingredients in the crock-pot. No need to worry about burning food or cooking time. You can cook while you are sleeping or while you’re away from home. Just turn it on and forget about it!
What you need
3 cups sweet potatoes, roughly chopped
1 cup purple onion, finely chopped
1 cup of corn kernels
1 red bell pepper roughly chopped
3 medium garlic cloves finely chopped
2 cups cooked whole black beans in crock-pot or canned
1 cup tomatoes, roughly chopped
4 cups water
3 Tbs tomato paste
½ cup raw quinoa
1-2 Tbs chipotle in adobe
1/2 tsp cayenne
2 tsp smoked paprika
½ to 1 tsp ground cumin
1/2 tsp ground coriander seed
2 vegetable bouillon cubes
Salt and pepper to taste
How to prepare
• Cook your beans overnight in crock-pot, or use canned beans.
• Chop the veggies in small to medium sized squares
• Dissolve the vegetable bouillon cubes in the water.
• Add all the ingredients to the crock-pot, stir well and cook on low speed for 3 hours approximately.
Serve with:
Avocado in cubes
Fresh cilantro leaves, chopped
Fried plantains
• Choose very ripe plantains with blackened skn.
• Heat a skillet over medium heat and brush with oil.
• Peel the plantain, cut in slices at an angle or in circles of about ½” thick.
• Cook plantain approximately 2 minutes a side, until both sides are brown.
• When browned, remove from skillet and place on a plate. Serve hot.
Accompany with whole grain bread or hot tortillas

CHILE SIN CARNE
Este platillo es un favorito en nuestra casa, no solo porque esta cargado de proteína, buenos carbohidratos, minerales, vitaminas y muchos sabores deliciosos, es muy fácil y sencillo de preparar.
Si no tienes una crock-pot eléctrica (olla de cocimiento lento), en verdad te recomendamos que compres una. Esta sencilla y económica olla es sin duda una súper herramienta cuando se trata de cocinar leguminosas, ya sean frijoles o garbanzos, quedan deliciosamente tiernos y además no se necesita aceite para cocinar. Para esta receta solo corta las verduras y échalas junto con el resto de los ingredientes en la crock-pot. No necesitas preocuparte sobre quemar la comida o el tiempo de cocción. Puedes cocinar durante la noche mientras duermes o mientras estas fuera de casa. Solo enciéndela y olvídate de ella.
Lo que necesitas
3 tazas camote cortado en cuadros
I taza cebolla morada picada
1 taza de elotes desgranados o de lata
1 pimiento rojo cortado en cuadros
3 ajos picados
2 tazas frijoles negros enteros cocinados en crock-pot o de lata
1 taza jitomate cortado en cuadros
4 tazas de agua
3 cdas pasta tomate
1/2 taza quínoa cruda
1-2 cda chipotle en adobo
1/2 cdita de chile cayena
2 cditas páprika ahumada
1/2 a 1 cdita comino molido
1/2 cdita semilla cilantro molido
2 cubitos consomé vegetal
Sal y pimienta al gusto
Como prepararlo
• Cocina los frijoles durante la noche en el crock-pot o usa frijoles de lata.
• Corta las verduras en tamaños pequeños a medianos.
• Disuelve los cubos del consomé de verduras en el agua.
• Echa todos los ingredientes en el crock-pot, mezcla bien y cocina a calor bajo por tres horas aproximadamente.
Servir con:
Aguacate en cuadritos
Cilantro fresco picado
Platanitos machos fritos:
• Escoge plátanos bien maduros con piel ennegrecida
• Calienta un sartén sobre fuego mediano/alto y cúbrelo con poco aceite.
• Pela el plátano y rebánalo en ángulo o en rodajas como de 1.5cm de ancho
• Cocina aproximadamente por 2 minutos en cada lado hasta que ambos lados este dorados.
• Cuando estén dorados, remuévelos del sartén y ponlos en un plato. Sirve caliente.
Acompáñalo con un buen pan integral o tortillas calientitas.
