This guajillo chile sauce is mouth-watering! You can use it in chilaquiles, with your veggies, tacos or on the pasta of your choice.
This is the same chile fresh and dry.
This chile is mildly hot
What you need
8 dried guajillo chiles
1 extra hot chile, chopped (habanero, jalapeño or green)
4 large ripe tomatoes (716 grams)
1 medium sized onion, diced
3 to 4 cloves of garlic, crushed and roughly chopped
½ tsp freshly ground black pepper
2 ½ tsp Sea salt or to taste
2 tbs safflower oil
How to prepare
• Quickly rinse the guajillo chiles to remove any dust or visible soil. Cut off the top and discard the seeds.
• Place the guajillo chiles in a single layer on a hot skillet or frying pan and toast over medium heat on both sides until crispy and fragrant, about 3 to 4 minutes.
• Place the guajillos chiles with the tomatoes in a pot. Add enough water to barely cover them and cover with a lid. Bring to a boil on high heat for about 8 to 10 minutes or until the guajillo chiles are soft and the tomatoes well cooked. When ready put the pot aside to cool a bit.
• Put a little oil on a large hot skillet. Add the onions, garlic and extra hot chile, stirring frequently to a uniform soft golden brown.
• Place all ingredients in a blender and blend at high speed until smooth.
• Heat up before serving.

SALSA GUAJILLO
¡Esta salsa guajillo hace agua la boca! Puedes usarla caliente para chilaquiles, sobre tacos, con tus verduras o sobre tu pasta favorita.
Lo que necesitas
8 chiles guajillos secos
1 chile extra picante, sin semilla y picado (habanero, jalapeño o serrano)
4 jitomates grandes maduros (716 gms)
1 cebolla mediana picada en cuadritos
3 a 4 dientes ajo, cortados en trozos grandes
½ cdita de pimienta negra, recién molida
2 ½ cdita sal de mar o al gusto
2 cdas aceite de cártamo
Como preparar
• Enjuaga brevemente los chiles guajillos. Corta la parte superior y retira las semillas.
• Coloca los chiles guajillos en una sola capa sobre un sartén caliente y ásalos a fuego mediano por ambos lados hasta que estén tostados y fragantes.
• En una olla mediana pon los jitomates junto con los chiles guajillos. Agrega agua hasta apenas cubrirlos y tápalos. Ponlos a hervir a fuego alto de 8 a 10 minutos o hasta que los chiles estén suaves y los jitomates bien cocidos. Cuando estén listos retira la olla del fuego para que enfríe un poco.
• Pon aceite en un sartén caliente de buen tamaño, agrega la cebolla, el ajo y el chile extra picante, moviendo frecuentemente, hasta un suave dorado parejo.
• Pon todo en una licuadora y licua a velocidad alta hasta que quede suave.
• Caliéntala antes de servir.
