These cinnamon rolls are the bomb, way healthier compared to conventional rolls made with lots of butter. They are free of refined sugar, made with organic flour and the good fats of coconut oil. They will make your hearts and your bellies very, very happy; perfect for any special occasion.
Best to eat straight out of the oven :)
As part of making all the necessary changes to improve our lives and the lives of animals, we decided to stop consuming all animal products. We thought we had to say goodbye to our long time favourite sweet breads made with flaky dough, like these extra delicious cinnamon rolls, because the dough is prepared with lots of butter. Yet much to our delight, butter can easily be substituted with coconut oil, so they not only taste better, they are much healthier. We sincerely like them even more than the original rolls, beyond any health or conscious issue.
What you need
serves 11 rolls
1¼ cup plant based milk (almond, coconut, rice, soy gmo-free)
¼ cup coconut sugar or brown sugar
2 tsps dry instant yeast
2 Tbs coconut oil, softened
3 cups all purpose flour
1½ tsp sea salt
½ cup coconut oil
Filling
¾ cup coconut sugar
1/3 cup maple syrup
2 tsp vanilla extract
1 Tbs cinnamon
1 cup chopped pecans
Coconut sugar to sprinkle on top
How to prepare
1. Pour the warm milk, sugar and yeast into a large bowl. Leave for 5 minutes until frothy. Then add the softened coconut oil.
2. Add flour and sprinkle the salt, incorporating with a wooden spoon into a shaggy ball.
3. Turn dough out onto a lightly floured surface and knead for 1 minute or until a sturdy dough forms, adding a little flour only if necessary.
4. Place the dough in a big oiled bowl, cover with a plastic wrap or a slightly wet kitchen towel and let it rest in the fridge overnight.
To assemble the dough and coconut oil
1. Soften and whip the 1/2 cup of coconut oil until it has a creamy and spreadable texture. Chill if necessary so it doesn’t melt, but don’t let it harden.
2. On a lightly floured work surface roll the cold dough into a 40cm x 30cm rectangle approximately.
3. Using a spoon spread the coconut oil on the rectangle.
4. Fold the left third of the dough into the middle and then the right third into the middle so that it overlaps the other fold, like a business letter.
5. Fold again in three thirds, this time in the other direction.
6. Place the dough in a bowl covered with plastic wrap or a slightly wet kitchen towel and put it into the fridge for 30 minutes and then repeat steps 2, 4 and 5.
7. Place again the dough on a bowl and cover again with plastic wrap or wet kitchen towel, let it rest in the fridge for another 30 minute. After this, the dough is ready to roll and shape.
*Don’t be intimidated by the lengthy instructions. This step is not difficult just try to go fast in the rolling and folding so the coconut oil doesn’t melt. Of course if you don’t want to use so much oil, you can skip this step and just roll the log without spreading the coconut oil, but the rolls will be cake-like. We definitely recommend you to follow the recipe for that delicious flaky and soft texture.
To shape the cinnamon roll
1. In a bowl mix well the coconut sugar, cinnamon, maple syrup and vanilla, reserve. Chopped the pecans in big pieces.
2. Take out the dough out of the fridge. On a lightly floured surface roll the dough to a 40cm x 30cm rectangle, approximately.
3. With a spoon spread the cinnamon mixture evenly. Then sprinkle on the pecans.
4. With both hands tightly roll the dough up into a log. With a sharp knife, cut 11 buns approximately.
5. Place them close together tightly on baking pan. Sprinkle extra coconut sugar on top of the buns and cover with plastic wrap or dry kitchen towel. Let them rise in the fridge while you preheat the oven at 180ºC.
6. Once the oven is hot, bake rolls for 20 minutes. Let cool for a few minutes and then serve immediately.

ROLLOS DE CANELA SUAVES Y HOJALDROSOS
Haz sonreír a tus amados e impresiónalos con estos celestialmente dulces, deliciosos y suavecitos rollos de canela
Estos rollos de canela están fuera de serie y son mil veces mas sanos comparados con los rollos convencionales hechos con mucha mantequilla. Están hechos sin azúcar refinada, y hechos con harina orgánica y las buenas grasas del aceite de coco. Harán muy, muy feliz a sus corazones y su paladar; perfectos para cualquier ocasión especial.
Son mas ricos recién salidos del horno :)
Como parte de hacer todos los cambios necesarios para mejorar nuestras vidas y las vidas de los animales, decidimos dejar de consumir todo producto animal. Pensamos que tendríamos que decir adiós a nuestros panes dulces favoritos hechos con masa hojaldrada, como estos deliciosos rollos de canela, ya que el hojaldre se prepara con mucha mantequilla. Sin embargo, para nuestro deleite, la mantequilla puede ser fácilmente sustituida con aceite de coco, así que no solo saben mejor, son mucho mas saludables. Sinceramente nos gustan aún mas que los rollos originales, mas allá de cualquier tema de salud y conciencia.
Lo que necesitas
1¼ taza leche vegetal (almendra, coco, arroz, soya)
¼ taza azúcar de coco o azúcar moscabado
2 cditas levadura instantánea
2 cdas de aceite de coco suave
3 tazas harina blanca
1½ cdita sal de mar
½ taza de aceite de coco
Relleno
¾ taza azúcar de coco
1/3 taza miel maple
2 cditas extracto de vainilla
1 cda canela
1 taza de nueces pecanas, picadas
Azúcar de coco para espolvorear arriba
Como prepararlo
1. En un tazón grande mezcla la levadura con la leche tibia y el azúcar. Déjala reposar 5 minutos para activar. Agrégale el aceite de coco suave.
2. Agrega la harina y esparce la sal, incorporando todo con una cuchara de madera hasta que se forme una bola pegajosa.
3. Pásala a una superficie limpia y ligeramente enharinada y amasa 1 minuto hasta que la masa no se pegue, agregando un poco de harina solo si es necesario.
4. En un tazón grande y engrasado, pon la masa. Cúbrela con plástico adherente o un trapo de cocina ligeramente húmedo y déjala reposar en el refrigerador toda la noche.
Como aplicar el aceite de coco
1. En un recipiente suaviza y bate la ½ taza de aceite de coco hasta que este cremoso y fácil de untar. Enfríalo si necesitas para que no se derrita, pero no dejes que se endurezca.
2. En una superficie limpia y ligeramente enharinada, extiende la masa fría en un rectángulo de aproximadamente 40cm x 30cm.
3. Con una cuchara extiende el aceite de coco por todo el rectángulo.
4. Dobla la masa extendida en tres, doblando primero la parte izquierda hacia el centro y luego la derecha hacia el centro de tal forma que quede encima de la otra parte doblada, como al doblar una carta.
5. Dobla otra vez en tres tercios, esta vez en la otra dirección.
6. Pon la masa en un tazón y cúbrela con plástico adherible de cocina o una trapo de cocina húmedo. Refrigerarla por 30 minutos y luego repite los pasos 2, 4 y 5.
7. Vuelve a guardar la masa en el refrigerador por 30 min. Después de este paso la masa esta lista para hacer los rollos.
*No te dejes intimidar por estas largas instrucciones. Te prometemos que no es tan difícil, solo trata de hacerlo lo mas rápido posible para que el aceite no se derrita mucho. Claro que si prefieres usar menos grasa, puedes hacer el rollo sin untarle el aceite de coco, pero quedará mas como pastel. Definitivamente te recomendamos que sigas la receta para esa deliciosa textura hojaldrada y suave.
Para armar el rollo de canela
1. En un tazón mezcla la azúcar, canela, miel de Maple y vainilla. Revuelve bien y reserva. Pica las nueces en pedazos grandes.
2. Saca la masa del refrigerador. En una superficie ligeramente enharinada estira la masa con un rodillo hasta formar un rectángulo de aproximadamente 40cm x 30cm.
3. Con una cuchara extiende la mezcla de canela. Luego espolvorea las nueces.
4. Con las dos manos enrolla la masa hasta formar un rollo apretado. Con un cuchillo filoso corta 11 rollos aproximadamente. Colócalos juntos estrechamente en un molde ya preparado. Esparce azúcar de coco sobre los rollos y tápalos con plástico adherible o con una toalla de cocina y déjalos crecer en el refrigerador mientras se calienta el horno a 180ºC.
5. Una vez que el horno este caliente, hornéalos por 20 minutos. Déjalos enfriar unos minutos y sírvelos inmediatamente.

Se puede usar otras harinas que no sean blancas cómo por ejm espelta integral? O trigo pero integral?

Hola Mercedes! Claro que si se puedes usar otras harinas, integral y espelta suenan muy bien, lo único es que la textura de los rollos va a quedar un poco diferente. Claro que van a seguir estando deliciosos :) Nos encantaría saber que tal te quedaron.
