Almond Pâté is absolutely delicious. The combination of ingredients gives it the subtle sweetness of the almonds, the smoked flavour of the roasted chile poblano and the freshness of the red onion. All ingredients of this recipe make a perfect combination of very Mexican flavours. It’s hard not to become addicted to this pâté :)
The almond pâté is surprisingly versatile. We like it a lot as a filling for red enchiladas or with freshly made tortillas ‘quezadilla’ style accompanied by your favourite salsa. It’s delicious in a sandwich with avocado, tomato, fresh lettuce and spinach or as a flavourful dip accompanied with raw veggies, totopos, or toasted pita bread. Or you can use it as an exquisite almond and chile poblano pesto with the pasta of your choice.
¿Why are all nuts and seeds so good?
Although there are some differences in size, flavour, aromas and percentages, all seeds and nuts are a powerhouse of nutrients. They are rich in proteins, fibre, vitamins and essential minerals; and loaded with antioxidants that protect us from cancer, heart disease and premature ageing. They contain high levels of vitamin E and other good oils that not only protect our heart and improve our memory, they help our skin, hair and nails to be radiant and healthy. In a nutshell, seeds and nuts nourish, beautify, detoxify and help us loose those extra kilos ;)) Remember, because they are so powerful they must be eaten in moderation.
Almonds are deliciously fresh and crunchy. You can play with different ingredients and combinations to create all types of dishes like delicious dips, spreads and creams, a delectable sweet almond marzipan, or simply as nutritious almond milk. Without a doubt, almonds are a gift from our beautiful mother Earth.
Why soak nuts and seeds?
Our wise mother Nature takes care of all seeds -which include nuts, grains and beans- with antinutrients (natural poisons) and enzyme inhibitors to protect them from predation by insects and to help prevent premature sprouting. This way they stay protected so the process of germination will start only when the optimal conditions of the necessary humidity and warmth take place in nature. This process washes off the inhibitors and antinutrients, ‘wakes up’ the seeds and activates all the nutrients that will be needed for the seed to evolve in a fruitful plant or a large tree. What a wonderful mechanism!
For these reasons, if we soak the seeds in abundant water from 8 to 10 hours, they will become more digestible and we will be able to absorb all the powerful nutrients they contain. So if you want to perfectly absorb their goodness, do not forget to soak then during the night.
What you need
(Serves 4 cups of pâté)
2 cups almonds
1 tbsp water
8 medium chiles poblanos
2 tbsp lime or lemon juice
2 to 3 tsp sea salt
½ red onion (finely chopped)
Black pepper to taste
How to prepare
• Rinse the almonds under running water.
• Place them in a glass or ceramic bowl (don’t use metal or plastic) and soak them overnight in purified water or minimum for 2 hours in warm water if you are in a hurry.
• Once soaked it is easy to peel their skin off. In some almonds you only need to take one between your thumb and forefinger and pinch gently to slide the skin off. Be careful, if you apply too much pressure the almond can shoot out. Other almonds need more dedication and you can do it as an obligation or as a meditation that will enrich your day. Think about it :)
• Rinse well the chiles, dry them and place on a hot skillet (griddle) or directly over the flame, turning them constantly with a heat resistant kitchen tong, until most of their skin is burnt. Be careful not to over-burn.
• Once roasted place them inside a pan with a lid and wait a few minutes until they start to sweat to loosen the burnt skins. Place one by one on a plate and scrape off with a fork or a spoon the burnt skin. Open and take off the seeds and veins so it will be mildly hot or if you like it spicy, leave some seeds and veins on.
• In a food processor, put the almonds, 4 roasted chiles, lemon juice, water, salt and pepper. Process until creamy and soft, stopping to scrape down the sides every now and then. If you need more water add one or two tablespoons until desired consistency.
• Chop the other 4 chiles in small squares, about ½ cm in size.
• In a bowl put the pâté, the finely chopped red onion and the chopped chiles, mix them well.

Note: If you are using a blender, use more water, about ¼ cup more or less, and blend until desired consistency.

PATÉ DE ALMENDRA Y CHILE POBLANO
El paté de almendra es absolutamente delicioso. La combinación de ingredientes le da la dulzura sutil de la almendra, el sabor ahumado del chile poblano asado y la frescura de la cebolla morada. Todos los ingredientes de esta receta hacen una combinación perfecta de sabores muy mexicanos. Es difícil no volverte adicto a este paté :)
El paté de almendras es sorprendentemente versátil. Nos encanta como relleno para las enchiladas rojas, o con tortillas recién hechas estilo ‘quezadillas’ acompañadas de tu salsita favorita. Delicioso en un sándwich con aguacate, jitomate, lechuga y espinaca fresca o como un sabroso dip, acompañado con verduras crudas, unos crujientes totopos o pan árabe tostado. O lo puedes usar como un exquisito ‘pesto’ de almendras y chile poblano con tu pasta preferida.
¿Por qué son tan buenas todas las nueces y semillas?
Aunque hay algunas diferencias en tamaño, sabor, aroma y porcentajes, todas las nueces y semillas son una poderosa fuente de nutrientes. Son ricas en proteínas, fibra, vitaminas y minerales esenciales; cargadas de antioxidantes que nos protegen del cáncer, enfermedades del corazón y envejecimiento prematuro. Contienen altos niveles de vitamina E y otros buenos aceites que no solo protegen nuestro corazón y mejoran nuestra memoria, ayudan a nuestra piel, cabello y uñas a estar radiantes y saludables. En pocas palabras, las semillas y las nueces nutren, embellecen, son depurativas y nos ayudan a bajar esos kilos de mas. Recuerda, por ser tan poderosas se deben comer en moderación.
Las almendras son deliciosamente frescas y crujientes. Puedes jugar con diferentes ingredientes y combinaciones para crear todo tipo de platillos como deliciosos dips, aderezos y cremas, un exquisito mazapán de almendras, o simplemente una nutritiva leche de almendras. No cabe duda, las almendras son un regalo de nuestra hermosa Madre Tierra.
¿Por que remojar las nueces y semillas?
Nuestra sabia madre Naturaleza cuida a todas las semillas -que incluyen nueces, granos y frijoles- con antinutrientes (venenos naturales) y enzimas inhibidoras para protegerlas de los depredadores de semillas y evitar que se inicie el proceso de germinación antes de tiempo. Así, quedan protegidas para que la germinación se produzca sólo cuando en la naturaleza se den las condiciones óptimas de humedad y calor necesarios. Este proceso deslava los inhibidores y antinutrientes, despierta a las semillas y se activan todos los nutrientes que necesitarán para que las semillas se conviertan en plantas fructíferas y grandes árboles. ¡Que maravilloso mecanismo!
Por estas razones, si remojamos las semillas en abundante agua de 8 a 10 horas, se vuelven mas digeribles y podemos absorber todos los poderosos nutrientes que contienen. Así que si quieres asimilar perfectamente sus cualidades, no olvides remojarlas toda la noche.
Lo que necesitas
(Rinde 4 tazas de paté)
2 tazas almendras
1 cda agua
8 chiles poblanos medianos
2 cdas jugo de limon
2 a 3 cditas sal de mar (sin flúor)
½ cebolla morada (picada fina)
pimienta negra al gusto
Como prepararlo
• Lava las almendras en una coladera bajo el chorro de agua.
• Ponlas en un tazón de vidrio o cerámica (no uses plástico o metal) remójalas en agua purificada toda la noche o mínimo 2 horas en agua tibia si tienes prisa.
• Una ves que han remojado es muy fácil quitarles la cascarita. En algunas almendras solo tienes que presionar una entre tus dedos pulgar e índice y listo, solo ten cuidado porque a veces pueden salir disparadas. Y otras necesitan un poco mas de dedicación y lo puedes hacer como una obligación o como una meditación que enriquecerá tu día. Piénsalo :))
• Lava bien los chiles, sécalos y ponlos en un comal caliente o directo sobre la lumbre, volteándolos constantemente con una pinza de cocina resistente al calor hasta que la mayor parte de su piel este quemada. Ten cuidado de no sobre quemar.
• Una vez asados, ponlos en una ollita con tapa y espera unos minutos a que empiecen a sudar para aflojar la piel quemada. Colócalos en un plato uno por uno y raspa con un tenedor o cuchara todo lo quemadito. Ábrelos y quita las semillas y las venas para que no pique tanto y si lo quieres picoso deja algunas venas y semillas.
• En un procesador de alimentos agrega las almendras, 4 chiles asados, jugo de limón, agua, sal y pimienta. Procesa hasta que este suave y cremoso, parando de vez en cuando para bajar la crema de los lados con una espátula. Si necesitas mas agua agrega una cucharada a la vez hasta la consistencia deseada.
• Corta los otros 4 chiles en cuadritos como de ½ cm en tamaño.
• En un tazón agrega el paté, la cebolla finita y los chiles cortados en cuadritos, mézclalos bien.
Disfruta!
Nota: si lo haces en licuadora, solo agrega mas agua, como ¼ de taza mas o menos y licua hasta obtener la consistencia deseada.
